
This week we're celebrating St. Patrick's Day! Which is really another way of telling you we're getting day drunk and mowing down on this beer bread. And now you can too :) The prep for this recipe is ridiculously easy - the hardest part is waiting for the bread to bake and cool so you can dig in!

Ingredients:
12 oz. (354mL) malty dark beer
3-4 jalapeños
½ cup corn
½ cup cheddar cheese
3 cups all-purpose flour
1 tbsp. baking powder
3 tbsp. sugar
½ cup butter
1 tsp salt

Directions:
- Dice 2 jalapeños and remove the seeds - slice one and set it aside (you will be putting this one on top of the bread).
- Preheat the oven to 350F. Melt the butter and pour half into a 9x3 loaf pan.
- Mix all the dry ingredients in a large bowl (flour, baking powder, sugar, and salt).
- Pour the beer into the dry ingredients and stir until just combined.
- Stir in the corn, jalapeños and almost all of the cheese (saving some to sprinkle on top).
- Add to the loaf pan and smooth it out with the back of a wooden spoon. Pour the remainder of the melted butter on top.
- Sprinkle with the remaining cheese and top with the sliced jalapeño
- Bake until golden-brown and a toothpick inserted in the centre comes out clean, about 1 hour.
